Fall Favorites 

Fall is my absolute favorite season for many obvious reasons- pumpkin (flavored everything!), beautiful foliage, crisp cool air, and large fluffy sweaters. 

Everything about fall is comforting, both for the body and soul.

A couple of my favorite fall quotes remind me of the beauty that comes with this season:

Fall is an important time for us to reflect on the beauty that comes from change, and letting things go. It’s also an amazing time for us to connect with nature, and to enjoy the wonderful tastes autumn brings. Pumpkin, cinnamon, maple, vanilla, cranberry, apple, and squash are a few of the many examples.

My favorite fall recipe is my healthy maple coffee creamer. 


1.5 cups of coconut milk

8-10 dates

2 tsp grass fed ghee

1 tbsp maple syrup

(If you want pumpkin flavor, add approx 1/4 cup of pumpkin)

1-2 tsp cinnamon *Blend in high speed blender and enjoy. If you want a thicker consistency, add more dates.

My second favorite are these pumpkin dark chocolate muffins! They save loads of calories and sugar, without sacrificing taste! 


-2 eggs

-1/2 cup pumpkin purée

-1/2 cup milk (any kind will do)

-2 tbsp maple syrup -1/2 tsp vanilla extract

-1/2 tsp pumpkin pie spice -1 cup oats

-1/4 cup dark chocolate chips

-1 tsp baking powder 

Bake at 375 for 18-20 minutes.

My third favorite is a coconut milk latte with cinnamon. This is my go-to coffee order during the fall season. It’s warm and comforting, tasty, and sweet (without the added sugars!). 

My fourth and final favorite is healthy chicken noodle soup. It’s perfect for chilly nights, and healing colds. 


2-4 chicken breasts (depends on how many your feeding)

-1.5 tsp basil

-2 tsp oregano

-4 bay leaves 

-3 stalks celery

-4 stalks carrot

-1 box chicken broth

-2 cups veggie broth

-1 can cannelini beans 

-2 tbsp ghee 

-1 tbsp apple cider vinegar 

-1 tsp salt and pepper

Set your instant pot to manual 20 minutes. Use the quick release method. If using a crockpot, cook on high for 4 hours.
